There is nothing better than fresh vegetables straight from your garden! If you’re in a warmer zone, you probably have an abundance of squash and zucchini coming in at the moment! I’m on a mission to come up with easy and tasty ways to use up ALL the zucchini this year. So far, I’ve mixed it up, gotten creative, and tried out different recipes, Today I am sharing my favorites thus far! Make sure you check back on this post as I will be adding to it with new recipes throughout the summer!
Zucchini Bread
One of the easiest most delicious ways I’ve found to use up my zucchini is by making soft, delectable bread! Check out this reel! I made this yesterday and it was super easy to whip up! Plus, this recipe is great to toss in the freezer if you don’t plan to eat it right away. I followed this Zucchini Bread Recipe as a guideline. But, like always, I tweaked it just a little! In order to grate the zucchini to make it easier to bake with, I used this grater and it worked like a charm!

Other Ways To Use Your Zucchini
Our favorite way to cook our garden veggies lately has been by tossing them with olive oil, salt, pepper, and garlic powder. Then we roast in the oven or on the grill! It tastes so fresh and is the perfect side to any meal! We always plan to make extra so we can add them to our eggs for a veggie omelet in the morning, too!
Up next I plan to attempt a sourdough zucchini loaf! If you have any favorite recipes, comment down below and let me know so I can try them out!
